Confection

• 1 3/4 to 2 cups (11.5- to 12-oz. pkg.) Chocolate, Milk Chocolate or White Morsels

• 2 tablespoons vegetable shortening

• 36 Strawberries Directions LINE baking sheet with wax paper.

MICROWAVE morsels and vegetable shortening in uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted; cool slightly.

DIP strawberries about halfway into melted morsels; shake off excess. Place on prepared baking sheet; refrigerate until set.

For a Decorative touch:

MICROWAVE 1/2 cup White or Semi-Sweet Chocolate Morsels or Baking Bars, in small, plastic bag on MEDIUM-HIGH for 1 minute; knead until smooth. Cut tiny corner from bag; squeeze to drizzle over strawberries. Refrigerate until set.

Some chef's recommend anywhere from thirty minutes to two hours chilling time between rolling and folding. Consider that the roll, fold and chill process is done four times, you need to block off two to eight hours to make puff pastry. Or, take a trip to the frozen food section of the grocery store and buy it.

Ready made puff pastry is available in sheets or shells. To thaw it at room temperature takes about thirty minutes, in the refrigerator about four hours. It will keep in the refrigerator up to two days. When shaping the dough, work with one sheet at a time, refrigerating remaining sheets until ready to use. As with all dough handle as little as possible. A pastry wheel, pizza cutter or sharp knife are the best utensils for cutting the dough. Cut edges should be crisp to keep the layers separate so that they puff during baking. Always bake puff pastry in a conventional oven and keep in mind that darker baking sheets cook faster.

Vanilla pastry cream is the standard filling for a Napoleon. This is a very short recipe for making quick Napoleons.

1 Package of frozen puff pastry dough

2 Packages of Vanilla instant pudding

1 Bottle of a good chocolate fudge or chocolate drizzle

3 Ounces of confectioners sugar

Prepare instant pudding according to package directions. While pudding is chilling follow directions for thawing, unfolding and baking puff pastry sheets. Cut into desired shape at bake at 400° for twelve minutes or until golden. Pay close attention to baking time, sheets burn easily. Let cool to room temperature.

To assemble you will place a layer of pastry in bottom of a sheet pan. You will then gently spread with a layer of pudding, then another layer of pastry. Repeat the layering process until ingredients are used up. You will then heat your chocolate fudge until it is at a pouring consistency. You will pour or drizzle over the tops of your Napoleons, and dust very lightly with the confectioners sugar. You will need a serrated knife to cut these into bars to sreve. Keep refrigerated until serving time.

If you want to substitute a low fat, or zero fat pudding in this recipe, there is still enough sugar to give it flavor with half or no fat in the pudding.

Line bottom and sides of spring form pan with sponge cake. Brush with reserved liqueur. Do not soak. Pour in cheese mixture. Allow to set overnight or at least 6 hours before serving. Sprinkle top with pignoli nuts.

Directions:

Boil for about 1 minute, or until the skins start to become soft. Drain boiling water and transfer peaches to a bowl of cold water to cool. Peel, halve and pit the peaches and set aside.

In a medium skillet, combine 1/3 cup of sugar and one tablespoon of butter. Cook together over medium heat for three to five minutes, or until the sugar begins to melt.

Coat an 8x8 square baking dish with non-stick cooking spray. Arrange the peaches inside, cut side up. Pour the melted sugar over the peaches and set all aside.

In a medium bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.

In a large bowl, beat 1/3 cup artificial sweetener, 1 tablespoon butter and oil with an electric mixer until combined. Add the egg or egg replacer, beating until smooth, then beat in the vanilla and almond extract. In a medium, heavy-bottomed saucepan mix sugar and cornstarch together. Whisk in the milk until smooth; add egg yolks and continue to blend until blended in. Stir in the lime juice. Add butter and whisk constantly over medium heat 7 to 9 minutes, just until boiling. Remove from the heat and stir for 1 minute. Stir in the zest until blended. Cover filling with plastic wrap and refrigerate 1 hour. Gently whisk in the sour cream until well blended. Pour filling into the pie shell. Cover with plastic wrap or the lid from crust and refrigerate at least 6 hours. Before serving, garnish with whipped cream and thin lime slices if desired.

QUICK AND EASY CHERRY CRISP DESSERT

2 cups white cake mix

2 cups canned cherry pie filling

1 box coconut pecan frosting mix

1/2 cup butter, melted

Preheat oven to 350 degrees.

Grease and flour (or spray with a baking nonstick spray)a 9 x 13-inch baking pan. Spread the pie filling evenly over the bottom of the pan. Sprinkle the dry cake mix over the pie filling. Sprinkle the frosting mix over the cake mix. Pour the melted butter evenly over the top of the frosting mix. Bake in a 350 degree oven for 25 to 30 minutes or until light golden brown.

Serve topped with ice cream or whipped cream, if desired.

SUNSHINE PUDDING

1 pkg (4-serving size)vanilla instant pudding mix

1 1/2 cups cold milk

1/2 cup frozen whipped topping, thawed

1 pkg (4-serving size)orange flavored gelatin

3/4 cup boiling water

1/2 cup cold water

ice cubes

Prepare the pudding mix according to the package directions using only 1 1/2 cups of milk. Let stand 5 minutes. Fold into the whipped topping. Spoon into 8 dessert glasses or cups. Chill.

Dissolve the orange gelatin in the boiling water, stirring until gelatin is completely dissolved. Combine the cold water and enough ice cubes to make 1 1/4 cups. Add the ice water to the gelatin; stir until thickened. Remove any remaining ice.

Beat the gelatin with an electric mixer until doubled in volume. Spoon over the pudding.

Note: Garnish with a dollop of whipped cream and a thin orange slice, if desired.

How to Make It

Allow the cream cheese to soften by placing it onto the counter to reach room temperature about twenty minutes before preparation time.

Preheat the oven to 350 degrees Fahrenheit.

Add the butter or margarine to the bottom of a 9 x 13 inch baking pan and then place it in the over while it is preheating to melt the butter in the pan. After melting the butter or margarine stir in the crushed graham cracker crumbs and the milled walnuts or pecans until the ingredients are thoroughly combined. Set aside 1 tablespoon of this mixture to prepare the garnish.

Press the remaining mixture into the bottom and sides of the 9 x 13 inch baking pan. Place in preheated oven and then bake for about 5 minutes. Remove from heat and allow the crust to completely cool.

Using a medium size mixing bowl and an electric mixer on a high speed setting you will add the softened cream cheese and the milk. Beat until the mixture is fluffy and light in consistency. Fold in half of the whipped topping and then spread this mixture over the bottom of the cooled crust evenly.

Prepare the lemon jello instant pudding mix by following the directions on the back of the box while using a clean, dry medium size mixing bowl and the remaining 3 cups milk. Spread the lemon flavored pudding over the whipped cream layer. Spread the remaining whipped topping over this lemon pudding layer. Garnish the dessert by sprinkling the reserved crumb mixture over the top of the dessert. Place in the refrigerator overnight to completely chill or for at least 3 to 5 hours before cutting and serving.

You will need:

  • 2 1/2 cups peeled fresh pear slices

  • 1 cup all purpose flour

  • 1 cup plus 1 teaspoon white sugar

  • 1/8 teaspoon salt

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground allspice

  • 1/2 cup chopped pecans

  • 1 lightly beaten egg

  • 3/4 cup plus 1 teaspoon melted butter


How to make it:

Preheat the oven to 350 degrees F. Grease a 9 inch pie pan with 1 teaspoon of butter and arrange the pear slices in the pan. Dust them with 1 teaspoon of sugar, the cinnamon, allspice and nutmeg. Mix the rest of the sugar with the rest of the butter in a medium bowl. Add the flour, egg, pecans, and salt and spread this mixture over the pears. Bake for an hour or until the pie is golden brown on top. Serve hot or chilled in slices, with cream or ice cream.
